Tripe can come from any ruminating (grass-fed) animal with a stomach, but most commonly cattle, pigs, sheep or lamb, and goats. Beef tripe is especially popular. Some of the more common types of tripe include book tripe, blanket tripe, and honeycomb tripe, frequently used in the popular dish tripe soup.
